Proteínas alternativas en la dieta humana: análisis Meta-Analíticos en el período de 2014 a 2024

Resumen

Este trabajo detalla la evolución del uso de proteínas alternativas en las dietas humanas, con base en un análisis meta-analítico del período de 2014 a 2024, destacando los avances tecnológicos, los desafíos culturales y los impactos ambientales. Las proteínas vegetales lideran en accesibilidad, reflejando familiaridad cultural, asequibilidad y sostenibilidad. Las microalgas y los hongos también han avanzado, ofreciendo beneficios nutricionales saludables, a pesar de los costos más altos. Los insectos han ido ganando espacio, especialmente en Asia y África, pero enfrentan resistencia en Occidente. Los residuos agroindustriales emergen como una opción sostenible, destacándose dentro de la economía circular. A nivel global, las microalgas lideran en beneficios nutricionales, mientras que los vegetales y los productos del mar se destacan en salud y accesibilidad. Los impactos ambientales varían: los vegetales y los insectos tienen bajos niveles de emisiones, mientras que las microalgas y los productos del mar enfrentan desafíos debido a sus altos costos. La eficiencia nutricional es mayor en los vegetales y las microalgas, mientras que los insectos y los residuos agroindustriales muestran potencial en nichos específicos. El mercado de proteínas alternativas está creciendo, impulsado por el aumento de empresas y patentes, especialmente en Asia y Europa. A pesar de las disparidades regionales, las tendencias reflejan una transición hacia dietas más sostenibles y alternativas. Para consolidar estas fuentes, son esenciales las políticas públicas, las innovaciones tecnológicas y las estrategias de educación alimentaria. Así, las proteínas alternativas pueden volverse cada vez más viables para superar los desafíos de la seguridad alimentaria y la sostenibilidad global.

  1. Paloma Danielle Brito Siqueira , Universidade Federal de Minas Gerais

    Graduated in Food Engineering from the Federal University of Minas Gerais (UFMG). During her undergraduate studies, she worked as a volunteer research fellow, developing research on the "Development and Evaluation of a Prototype of a Solar Dehydrator for Food". She has a solid academic background in food engineering and is interested in applying her knowledge in different professional contexts and continuing her technical and academic development.

  2. Demerson Arruda Sanglard, Universidade Federal de Minas Gerais

    Es licenciado en Ingeniería Agronómica (2005), tiene una maestría (2006) y un doctorado (2010) en Genética y Mejoramiento Vegetal por la Universidad Federal de Viçosa (UFV). Desde 2013, es profesor de la Universidad Federal de Minas Gerais (UFMG), con sede en el Instituto de Ciencias Agrarias (ICA), campus Montes Claros, donde trabaja en los programas de posgrado en Producción Vegetal, Producción Animal y Ciencias Forestales. Obtuvo un nombramiento administrativo como Coordinador del Laboratorio de Biotecnología (ICA/UFMG). También ha obtenido financiación para varios proyectos académicos (docencia, investigación y extensión).

    Se graduó en Ingeniería Agrícola por la Universidad Federal de Viçosa (UFV-MG) en 1999. Obtuvo una maestría en Ingeniería Agrícola, área de Energía (UFV, 2001). Obtuvo su doctorado en Agronomía, área de Suelos y Aguas, por la Universidad Federal de Goiás (UFG-GO) en 2010. Trabaja como profesor asociado en el Instituto de Ciencias Agrarias de la Universidad Federal de Minas Gerais, Campus Montes Claros (ICA/UFMG). En esta institución, imparte las siguientes asignaturas: Mecánica de Suelos, Electrotecnia e Instalaciones Eléctricas, Introducción a la Electrónica y Sistemas Embebidos, Automatización y Control Aplicados a las Ciencias Agrarias, y MS Excel, además de desarrollar diversos proyectos de investigación y extensión.

  5. Leonardo Máximo Silva, Universidade Federal de Minas Gerais (UFMG)

    Es licenciado en Ingeniería Agronómica (2019) por la Universidad Federal de Minas Gerais (UFMG). Obtuvo una maestría en Ciencias Forestales en la misma institución (2022). Actualmente cursa el doctorado en Producción Vegetal en la UFMG, con énfasis en "Balance de carbono en sistemas integrados de producción agropecuaria". Durante sus estudios de grado, recibió una beca de iniciación científica (PIBIC) de 2018 a 2019. Durante su licenciatura, trabajó en proyectos con cártamo, frijol y palma forrajera. Formó parte del grupo de estudiantes que dirigió el área experimental de BIOFABRICA en el ICA-UFMG, enfocándose en el mejoramiento, manejo y control de enfermedades y plagas en el cultivo de palma forrajera. Durante su maestría, trabajó en experimentos con el cultivo in vitro de especies forestales nativas. Trabajó como investigador temporal en la UFMG en proyectos de recuperación de áreas degradadas en 2022 y 2023. Actualmente es vicecoordinador del grupo de estudios en Ciencia y Tecnología Forestal (SILVITECH-UFMG) y miembro del grupo de estudios en sistemas integrados cultivo-ganadería-forestería (GESILPF-UFMG).
