Is there a culinary corn system in the Cearense Cariri?

This paper aims to analyze the culinary corn system in rural Cariri. To do so, it is used the studies of Carneiro (2003), Cascudo (1967), Flandrin and Montanari (1998), among others. Methodologically, ethnography and oral history are used, with the Cariri region as the locus, specifically the municipalities of Crato, Juazeiro do Norte, Aurora and Milagres, because it is believed that many of the food traditions are still well preserved in the region. Due to this dynamics, it is concluded that corn assumes a peculiar role in the formation of a culinary system based on the cultural identity of the region, exactly what occurs in the Cariri region.
